The classic pigeon bistilla is Morocco’s most famous dish. It is an exquisite pastry with two savoury layers and one sweet layer flavoured with cinnamon. Traditionally, the bistilla is always served to commence a diffa, a ceremonial feast of many courses, and is eaten by tearing bits off with the fingers. This is a street-style spring roll version, which is easy to eat and delicious dipped in a sweet mixture of ground almonds and cinnamon.
