You can serve this dish as a vegetarian meal on its own, as a side dish or as a topping for couscous. When in season, substitute pumpkin for the squash. A dollop of garlic-flavoured yogurt or a spoonful of harissa goes very well with the squash and shallots. I often serve this dish with a herb-flavoured couscous and a green salad for supper.
