This colourful fruity salad will please the eye and refresh the palate after a spicy dish. You can use sweet or sour Seville oranges and, when fresh artichokes are not readily available, opt for the frozen hearts that can be found in some supermarkets. To prepare the artichokes, remove the leaves, cut off the stems, scoop out the choke and hairy bits, and immerse them in water mixed with a squeeze of lemon juice.
