This classic milk pudding, which features throughout the Middle East and North Africa, is flavoured with orange flower water but you can use rose water or vanilla. The Moroccan version is usually decorated with ground almonds and cinnamon, but, for a change, here the top is caramelized and finished with a little rose petal jam. You can make rose petal jam with the scented petals from your garden, but the jam is also available in most Middle Eastern stores.
