This is another wonderful legacy of the invading Arabs. It is enjoyed all over the Middle East and North Africa, wherever the Arab soldiers settled, but the Moroccans have turned it into a bit of a speciality by combining the subtle almond taste with the perfumed flavour of orange flower water or, in more modern versions, fresh orange rind. Served chilled, it is a deliciously refreshing alternative to the ubiquitous mint tea - wonderful on a hot day.
