This hot, tasty marinade contributes its distinct flavour to many grilled fish and vegetable dishes and to some tagines. There are many variations of the classic chermoula and every family has their own version. Different herbs and spices may be used in varying proportions to produce wonderful results. Chermoula tends to be fairly hot and fiery so is particularly well suited to robustly flavoured meats and fish. This recipe makes enough for one dish.
