This simple meal of rice, cheese, and peas is terrific for families with young children because you can omit the fiery spicing and even the cheese until after you’ve served the kids. The peas add a sweet touch that is popular with smaller children and the cheese adds a creamy risottolike texture.

Ingredients

  • 1 cup long-grain white or brown rice
  • 2 or 2¼ cups chicken broth or water

Method

  1. In a medium-size saucepan, combine the rice with the broth (the larger amount of liquid is for the brown rice). Bring the liquid to a boil over medium heat, cover, and simmer until the rice is almost tender, about 15 minutes for white rice and 25 minutes for brown rice.
  2. While the rice is cooking, grate the cheese.
  3. When the rice is tender, stir in the pea
