Even though I originally made this soup to warm us up on a winter night, I agree with Maurice Sendak who says, “All seasons of the year are nice for eating chicken soup with rice.”

While this surely will appeal to kids and adults alike, with a few changes you could turn this into a sophisticated seafood soup for grown-ups only.

Following the soup, serve a hearty salad like Spinach, Orange, and Ricotta Cheese Salad or
