I adore a good lasagne but hate the work and time involved in precooking the noodles, making the sauce, layering the dish, and baking it for an hour.

When I crave lasagne during the week, I make this simple spaghetti dish instead. All the elements of a good lasagne are here, but they are combined in a simpler way: Spaghetti tossed with tomato sauce is topped with ricotta cheese mixed with Parmesan, olive oil, and fresh parsley.
