A meat sauce serves many uses: It’s a way to get protein on your pasta, a way to use up cooked meat, and a way to bring together bits and pieces of leftover ingredients.
The meat can be either ground veal or beef, chopped fresh pork, poultry, or ham, or whatever else you have on hand or feel like eating. Enriched with corn, peas, or another cooked vegetable, the meat sauce becomes a Monday-to-Friday meal.
