The red wine and caper base can be made hours, even days, in advance. Just toss the fish in at the end and simmer for a few moments. Cod gives off lots of liquid so plan to serve this with a starch such as bread, potatoes, or a grain to sop up the delicious juices.
If you can afford the calories and cholesterol, do add the butter at the end, for it adds a lovely finish to the sauce
