This isn’t a speedy recipe, but you can’t beat it for ease. Although it won’t become your classic weekday chicken dish, it is so good, it’s worth preparing when you have the time. Simply stick a whole chicken, sweet potatoes, acorn squash, beets, and a head of garlic in the oven for about 2 hours, then, during this time, take a nap, catch up on your correspondence, read the newspaper, or watch TV because dinner is cooking by itself.
