During the work week when I hanker for the tenderness and sweet flavor of roasted rack of lamb I make rib chops instead. It’s a lot cheaper and faster to cook chops than it is to roast an entire rack of lamb, and, since the rib chops are cut from the rack, the two cuts of meat are virtually identical.

If rib chops aren’t available, I settle on equally succulent loin chops. I can always find one of these cuts at the supermarket, whereas a rack of lamb is almost impossible to find out
