This is a richly flavored vegetarian dish, great served as a match for legumes, poultry, or meat or lovely served on its own, dabbed with some plain yogurt. If you like your raisins chewier, add them 5 minutes before the dish is finished cooking.

Ingredients

  • 1 onion
  • 2 carrots
  • 2 tablespoons vegetable oil or butter</

Method

  1. Mince the onion. Peel and thinly slice the carrots.
  2. Heat the oil in a large skillet over medium heat. Add the onion and sauté, stirring frequently, until it is translucent, 4 to 5 minutes.
  3. Add the carrots, spices, cracked wheat, raisins, and broth. Season to taste with salt and pepper.
  4. Bring the liquid to a boil, then reduce the heat to low
