In this original and wonderful supper, the red beans and tortillas combine to provide both protein and starch, and the peppers and tomatoes add color, taste, and more nutrition.

Hungry souls can supplement this main course with steamed broccoli or slices of avocado, and die-hard meat lovers could accompany this with a broiled lamb chop or grilled chicken.

Although I make this meal just for me and my husband, it can be doubled or even tripled.
