I know that avocados are fattening, but they taste so delicious. On days when I’m feeling thin, I indulge in an avocado in lieu of a salad.

What’s so nice about the avocado is that you can halve and pit it, then chop up the flesh and dress it right in its own skin, avoiding the cleaning of a salad bowl. On days when I’m feeling less lazy, I remove the flesh from the skin, chop it up, and dress it with tomatoes, cilantro, and lime juice. This can serve as a salad or as a guacamole di
