Beets are the perfect bake-along when you’re already roasting meat or cooking a casserole. Not only is this the easiest way I know to cook beets, it’s also the most delicious because the slow cooking releases and intensifies the natural sweetness of the vegetable.

Ingredients

  • pounds beets, with or without green tops
  • Salt and freshly ground black pepper
  • Butter for serving

Method

  1. Preheat the oven to 375°F.
  2. Scrub the beets under running water, trim their bottoms, and remove the green tops (if you’re saving the greens, stir-fry them).
  3. Place the beets on a baking sheet and bake until
