This is an instant and delicious way to prepare beets provided you have a food processor on hand. This recipe can be made with or without the green tops.


  • 6 medium-size beets, with or without green tops
  • ½ cup fresh dill or parsley leaves

  1. If the beets have their green tops, remove them and set aside. Peel the beets and grate them with the shredding disk of a food processor. If you have beet greens, rinse and coarsely chop them. Mince the dill or parsley.
