Garlicky Cabbage and New Potatoes

Although this takes about 50 minutes to cook, it is easy to assemble and cooks on its own. It makes sense to serve this with a main course like baked chicken or veal chops that take about the same time to cook as the cabbage.

Ingredients

  • ½ medium-size head green or Chinese cabbage or 2 small heads bok choy

Method

  1. Core and finely shred the cabbage.
  2. Heat the olive oil in a medium-size saucepan over medium-high heat. Add the cabbage and stir-fry until it just begins to wilt, 2 to 3 minutes.
  3. Stir in the paprika, wine, water, and caraway seeds. Cover and simmer over low heat for about 5 minutes.
  4. Meanwhile chop the garlic.
