Baked cherry tomatoes seasoned with olive oil, scallions, and herbs bring a splash of color and taste to any poultry, fish, or meat main course. The sugar in the recipe brings out the flavor of the tomatoes without sweetening them.


  • 2 pints cherry tomatoes
  • 2 tablespoons olive oil
  • ½ teaspoon
