This rather speedy dish provides a lovely contrast in flavors with the tang of the apple against the sweet of the yams. I usually serve this alongside Cornish game hens, turkey, lamb, ham, or pork.

Ingredients

  • 4 medium-size yams or sweet potatoes
  • 1 to 2 tablespoons vegetable oil
  • 2 tab

Method

  1. Peel the yams and cut them into ½-inch cubes.
  2. Heat the oil in a large skillet over medium heat. Add the yams and stir-fry them for a minute just to get them hot.
  3. Add the lemon juice and water, reduce the heat, cover the skillet, and simmer gently until the yams are just tender, about 15 minutes. Stir the yams every now and then to make sure they don’t st
