High in protein and loaded with taste as well as vitamins, this assembled dinner is quick to prepare and makes good use of a leftover half head of cabbage. Make it on an evening when you’ve not eaten anything substantial during the day and your blood sugar level is telling you that you need some protein—fast. If other members of your family plan to eat later, this dish keeps wonderfully in the refrigerator.

You can substitute two 7-ounce cans tuna or salmon, drained, for the mackerel, if you wish.
