The texture and taste of freshly poached salmon is rich and luxurious, totally unlike the canned variety. So even though this salad takes the effort of poaching the salmon and cooking the rice first, the result is really worth it.
If you’re making this for only two people, be sure to halve the recipe. Leftover refrigerated rice is hard and unpleasant tasting.
