This sweet summer supper of ham, rice, oranges, and dates evokes the exotic flavors of Morocco.


  • 1 cup long-grain white rice
  • 2 cups water Salt

  1. Combine the rice, the water, and salt to taste in a medium-size saucepan. Bring the liquid to a boil over medium heat, then reduce the heat and simmer partially covered until the rice is tender, about 18 minutes.
  2. Meanwhile make the citrus dressing in a serving bowl. Mix the cinnamon into the dressing. Cut the ham into ½-inch pieces and add them to the bowl. Peel t
