In New York City in the 80s, salads of sliced tomatoes and fresh mozzarella were as ubiquitous as Big Macs. But in spite of how familiar this combination is, I continue to love it. By adding rice to this well-loved mix, I turned a favorite salad into a favorite summer meal.

To complete the meal and perk up the look, you can add chopped arugula or watercress.
