Don’t ask me what in the world possessed me to first put these three ingredients together, but who cares! The result is a delectable combination of colorful, fabulous textures and tastes. And not only does it taste terrific, you don’t even have to cook to bring it together.
The salad also keeps well at room temperature, with nothing in it to spoil or turn sour.
Although this recipe serves four, I have tripled it successfully and can’t think of any reason why it wouldn’t work
