Don’t ever throw out that delicious stale sourdough or Italian whole-wheat bread. Use it instead in this tasty bread-salad dinner. In Italy, wondrous salads are made from stale bread, which is rejuvenated in hot water, squeezed dry, and coupled with fresh tomatoes and a lively anchovy dressing. To turn this into a substantial meal, I’ve added chopped crunchy vegetables and slices of fresh mozzarella.
Don’t substitute white cottony bread in this salad, because you need a sharp yeast
