The unusual combination of spinach with silky ricotta, tangy orange, and sharp radish makes for a light and refreshing meal. Serve the salad with a side of whole-grain bread or a bowl of chilled grains like rice, couscous, or bulgur.

Ingredients

  • 1 pound fresh spinach
  • 8 radishes
  • 4 navel oranges

Method

  1. Stem, rinse, and coarsely chop the spinach leaves. Thinly slice the radishes. Peel the oranges, removing all the white pith, and cut the sections into small chunks. Place all these ingredients in a serving bowl and toss with the oil.
  2. If you wish, chop the walnuts and toss them in. Season to taste with salt and pepper. Serve the ricotta cheese on the side or fold i
