The rich taste of these cheese pancakes belie their healthful qualities. I’m too lazy to go to the trouble of making pancakes for more than two people, but, if you wish to serve four, double the recipe and use two skillets. The sugar in this recipe doesn’t really sweeten the pancakes, it merely makes them taste more mellow.

I like to serve these after a fish soup of some sort or before a hefty salad.
