This is a great recipe to serve at any time of the year. The chicken breasts are flavoured with a tarragon paste (similar to a pesto), which can easily be made a day or two ahead of time. If preferred, basil or chives could also be used. As for the mash - it’s so easy to make and tastes delicious.

Ingredients

For the Chicken

  • 15 g bunch of tarragon, roughly chopped
  • 10 g bunch

Method

To prepare the chicken, place the tarragon, parsley, pine nuts, Parmesan, lemon zest, garlic, extra-virgin olive oil and seasoning in a food processor and whizz until you have a relatively smooth paste/pesto consistency.

Place the chicken breasts on a board and gently push your finger between the skin and the flesh to form a pocket. Place about a tablespoon of the ‘pesto’ inside each po
