I adore rice pudding and love the fact that it is so straightforward to make. Of course you can have just rice pudding, but the addition of cinnamon and raisins gives it a delicious, rich flavour and, when served with slices of caramelized apple, it is transformed into a very special midweek pudding.

Ingredients

For the Rice Pudding

  • 75 g risotto or pudding rice
  • 200 ml milk

Method

Place the rice, milk, cream, cinnamon, vanilla and raisins in a small non-stick saucepan. Bring to the boil over a medium heat and then turn down the heat until the creamy milk is just bubbling gently.

Leave to cook for 15 to 20 minutes, stirring frequently, until the rice has swelled and is soft, but still retains a little bite. Stir in the caster sugar and the rice pudding is ready.</
