Having a simple pudding recipe up your sleeve is essential and this won’t disappoint anyone.

Ripe greengages, apricots, peaches or nectarines can also be used.

Ingredients

  • 6-10 (depending on their size) ripe plums
  • 75 g mascarpone cheese
  • grated zest of ½

Method

Preheat the oven to 200°C/fan 180°C/gas 6.

Cut the plums in halt and remove the stones. Sit, cut-side up, in a baking dish or roasting tray big enough so they are not overlapping, but not so large that they look lost.
