Spelt is a fantastic flour to use as an alternative to wheat flour, and can be especially helpful for those who have a mild wheat intolerance. This is due to the fact that the gluten in spelt flour is water soluble, making it far more digestible. I quite like to use wholegrain spelt flour for these delicious pancakes, for added fibre and goodness, but white spelt or in fact standard wheat flour, white or wholemeal/whole-wheat, can of course be used instead.
