This recipe is even simpler and quicker to make than the one above, and it also goes well with ice-creams.

Ingredients

  • 200 g (7 oz) unsalted butter
  • 50 g (2 oz) caster sugar
  • 1 teaspoon vanilla essence
  • 50 g (2 oz) chopped dates (Medjools are best)
  • 175 g (6 oz) plain flour
  • 1 teaspoon of baking powder
  • 50 g (2 oz) cornflakes, crushed
  • 25 g (1 oz) cocoa

Method

Pre-heat the oven to 180–200°C/350–400°F/gas 4–6 and grease a 20 cm (8 in) tin.

Cream the butter and sugar together. Add all the other ingredients. Spoon the mixture into the prepared tin and bake in the pre-heated oven for 25–30 minutes.
