Fresh fruit salad has endless combinations. It’s basically prepared fruits all mixed together. The recipe here for fruit salad is just to give you an idea and a basic recipe to work from. Some fruits have a coarser texture and eat a lot better if just lightly softened in Stock Syrup. Or you can try using Poached Peaches or Poached Pears.
Any soft red fruits should always be added just before serving to prevent them colouring the other fruits.
One particular favourite of mine is summer fruit salad which is just poached blackberries, blueberries, redcurrants, blackcurrants, tayberries, strawberries and raspberries in a warm Stock Syrup. The flavours and colours together are fantastic.
And here’s just one more extra flavour. Use scissors to cut some thin strips of mint leaves and add them to the syrup. You get a lovely sweet mint flavour with every bite!
Of course, the best accompaniment to fresh fruit salad is simply pouring cream or even home-made Vanilla Ice-cream.
