A very similar recipe for vegetable stock is included in the original Rhodes Around Britain book. This recipe gives a different result. I have increased the quantity of carrots to give a sweeter taste to the stock. It can also be cooked to various stages leaving it at almost full capacity for risottos or vegetable stews, or reducing while cooking for butter sauces.
