Dukkah is an Egyptian condiment and spice mix. We are not quite sure how authentic ours is, but, boy, once you’ve made it, you will want it to be part of your life. For a dip, just mix the dukkah with a little olive, rapeseed or argan oil, but in general, it is most useful as the great transformer, brilliant on chicken, spinach, braised carrots, cauliflower or roast pumpkin.
