A lomo (pork) montadito is a stalwart on any tapas menu, usually served on its own on bread or with chopped tomato and a fried green pepper. The addition of jamón changes the name of this tapa to a serranito, as it is more often found in the sierra (countryside), with both the jamón and pork from the ibérico (black-foot) pig.
