Another favourite anchovy montadito is called a matrimonio, literally the ‘marriage’ of one salted anchovy anchoa and one marinated anchovy boquerón. Very simple but utterly delicious.

Ingredients

  • 2 Morito Rolls, cut in half (or 4 pieces ciabatta)
  • ½ garlic clove
  • 4 teaspoons

Method

Lightly toast the rolls, rub gently with the garlic and then drizzle with the olive oil or spread with the butter. Lay the salted anchovies and boquerones side by side on the toast and finish with the parsley and lemon zest. Eat immediately.
