This spiced version is a Lebanese recipe.
Place the yoghurt in a bowl, add the salt and mix well. Line a separate bowl with a fine (muslin) cloth large enough to hang over the sides. Spoon the yoghurt into the centre of the lined bowl, bring the corners of the cloth together and secure tightly with string or a strong elastic band.
