In our opinion British cauliflower is the best in the world and we are sure that beings from Mars would think it the most exotic and extraordinary-looking vegetable on this planet, yet most of us don’t even give it a second thought. Cauliflower is special because one can eat it raw for amazing crunch and subtle peppery taste, barely cooked and deliciously dressed, as in this recipe, or slow-cooked as in the next.
