The cauliflower becomes soft and rich from absorbing the flavoursome oil.

Ingredients

  • 4 tablespoons olive oil
  • 1 Spanish onion, sliced
  • 1 small cauliflower, l

Method

Heat the oil in a large, wide saucepan over a medium heat, add the onion and a pinch of salt and cook for about 15 minutes, stirring frequently, until soft, golden and sweet. Add the cauliflower florets, garlic, spices and another pinch of salt. Cook over a medium heat for 10–15 minutes, stirring often.

Now add the pine nuts, raisins and the saffron-infused water. Cover the pan and cook
