Nothing has quite surpassed our favourite falafel experience on the back streets of Cairo. Our friends Ali and Rebecca made it their mission to show us the best. The Egyptian name for falafel is taameya, and the stall we remember most was run by a proud Amazonian woman. We stood there for hours watching her technique and noting down the ingredients. We serve our falafel with green tahini and pickles.
