  • 1 small bunch of dill, roughly chopped
  • 1 small bunch of tarragon, roughly chopped
  • 1 small

Method

Place the herbs, garlic and olive oil in a food processor or use a hand-held blender and blitz to a smooth green paste. Transfer to a bowl and add all the remaining ingredients. Mix well, season with a little salt and check the seasoning. The ideal consistency is that of double cream. If the sauce is too thick, add a splash of water.
