We like to use the pale (white) courgettes or a mixture of yellow, green and white during the summer when we have a choice.

Ingredients

  • 4 large courgettes
  • 4 tablespoons extra virgin olive oil
  • juice of ½

Method

Cut the courgettes in quarters lengthways and scoop out the seeds. Place in a colander, toss with ½ teaspoon of salt and leave for 20 minutes.

Preheat the grill to its highest setting, prepare a medium to hot barbecue, or place a griddle pan over a high heat. Grill the courgett
