Broad beans are a delicacy in all their stages of growth: soft pods (up to 7cm long), steamed whole for 15–20 minutes, have a unique texture and taste. Really small beans can be eaten raw or simmered for 2–3 minutes until sweet. Medium-sized beans can be boiled for quite a long time (6–8 minutes) until they lose some of their tannic flavour and become sweet, or peeled. The skin of large broad beans can also be peeled and the beans enjoyed raw, or blanched for 1 minute before peeling. Always
