We like to think that the food we cook is unaffected by fashion or fad, yet we are continually falling in love with new flavours and probably overusing them furiously. Green aniseed is one of those recent love affairs. Just biting on a seed makes one happy. We use it as a background flavour in many Spanish dishes, but it goes particularly well with peas.
