When braised, Little Gem lettuce has a pleasingly mild bitter taste that contrasts well with the sweetness of the peas and the herbs.

Ingredients

  • 3 tablespoons olive oil, plus extra to serve
  • 2 garlic cloves, thinly sliced, plus 1 garlic clove

Method

Place a saucepan over a medium heat, add the olive oil and fry the garlic until golden, then add the allspice and peas. Almost cover the peas with water and simmer for 5 minutes; don’t add any salt.

Meanwhile, combine the yoghurt with the crushed garlic and season with a tiny pinch of salt and pepper. To prepare the lettuces, slice off the bases so that the leaves fall apart. Discard an
