At Morito we cook this dish in a wok; otherwise a large frying pan will do.

Ingredients

  • 1 large escarole, romaine or cos lettuce
  • 4 tablespoons extra virgin olive oil

Method

Trim off the tougher, darker leaves from the lettuce and discard. Wash the lettuce, dry well and cut into large bite-sized pieces.

Place a wok or large frying pan over a medium heat, add half the olive oil and fry the bacon or panceta until crisp. Remove from the heat, lift out the bacon, put aside and keep warm, reserving the oil in the pan.
