This mezze is delicious with the Lebanese White Garlic Sauce and sprinkled with sumac and mint.
Heat 100ml of the olive oil in a saucepan, add the garlic and fry over a medium heat until golden. Scoop out the garlic with a slotted spoon and put it on kitchen paper to absorb any excess oil. Replace the saucepan with a frying pan and strain 75ml of the oil into it. Turn up the heat to high and add the tomatoes. Fry until they begin to soften and are slightly coloured on both sides.
